If you want to counteract red I'd look at using Coffee or Ebony, lightened with Natural.

provincial is too gold for my liking... I agree with @Timothy Winzell

Good you'll be using Water base poly, won't add any color either.

No idea. When customers ask me for stains that will negate red tones most effectively, I don't go to those choices. Sorry.

Provincial has less red compared to Special Walnut.

Here are the two colors in the Bona DriFast line. Both samples are on red oak.
