IMO a sealed butcher block is always a bad choice , real wood has an enzyme in it that kills bacteria and so sealing kills that ability . I had all butcher block counters in this kitchen , ran a catering biz from there and just oiled the wood a double oiling near the sink it was so easy to live with and about once a year I sanded lightly and did a really good oiling
