Annie's Salsa Recipe Question

I will be making Annie's Salsa this weekend and Don't want to use bell peppers. Can I just leave them out without replacing them with something else?

    Thank you! it's been 5 years since I made it. I made it the year my husband passed away. He went crazy over it. It's been hard for me to make it since. I am ready to make it again! it's such a great salsa! I decided to substitute Anaheim peppers for the bell peppers.

    Craftylady, I'm sorry to hear about your husband, but I'm glad he enjoyed my salsa before he passed away.

    Thank you! I doubled the batch. I'm worried because I think I went over on the peppers by 1/2 cup. so that would have been over 1/4 cup for each batch.. I added 1/2 cup extra of vinegar. I was so careful in measuring everything. I say I think because I'm not sure. I usually write everything down...darn chemo brain. I'm not sure what to do now What would you do?

    Oh boy. You added extra vinegar, so I think I'd probably just go ahead and eat it, but I'm a bit of a risk taker. You, however, are on chemo, which affects your immune system. That lends a whole 'nother level to this issue. In spite of the fact that there is the extra vinegar in there for safety, I just am not comfortable with telling you that it's OK for you to eat it.


    Of course, I often dump a jar of salsa into a pot of chili as flavoring, so you could also use it for that. 10 minutes of boiling and 1 minute for each 1,000 feet above sea level and you have, ostensibly, rendered the toxins harmless. Again, that would work for me, but for you, I'd probably cut my losses and dump it. With health issues, I sure wouldn't risk anything for a batch of salsa, even good salsa.


    Unless, of course, it's been less than 24 hours, in which case I'd open the jars, add more acidity and recook, then reprocess.

    Thank you! I will most likely save it for putting in recipes. I will NOT make this mistake again. I made it on Saturday, so my 24hr window has closed.

    Fortunately, it's tomato season, so there's always time to make more!


    Somehow, I keep making the same mistakes, so good luck to you on not making this one again, LOL.
