Which Part of Bark to use?

Follow up on my post from yesterday about finding a good soil conditioner in North NJ: I have passed the mix through a kitchen colander to filter out dust and then a 1/4" sieve to screen out the larger pieces of bark.

On top are the largest pieces which did not make it through the sieve.

On the right is "soil conditioner" straight out of the bag, mixed with some perlite.

On the bottom is the dust filtered out of the bag.

On the left is the right (2 o'clock) with the dust and the larger pieces filtered out.

Will the right or left mixes provide sufficient aeration and prevent perched water? Would it be better to use a blend of some of these? Can the dust replace peat moss in the typical 511 mix? These will all be for citrus and other tropical fruiting plants as well as a few houseplants.
