Green tomatoes versus Green tomatoes........

We've had an early frost/freeze and so ahead of time I picked a bunch of green (unripe) tomatoes. But in looking for recipes of various things I can use these in, I realized that there is a type of tomato that is green when ripe. There are a lot of "green tomato" recipes online, but now I'm wondering if it matters if they are unripe green or ripe green tomatoes. Any ideas? I'm thinking it probably doesn't matter, although the nutritional value between the 2 can vary. Thanks!
