You have low ceilings if the fixture is 12 inches with out any chain its already at a 6.5 level in the room. you really need to account for that here otherwise it will end up looking stuck to the ceiling or below your eye level.

The light you show is at least 12 inches long and even on that 9 ft ceiling they are only using a foot of chain. big is good in a two count 3 is better if you need to go smaller. BUT I strongly suggest you blow up some balloons, cut out some shapes in cardboard and hang it from the ceiling with string and painters tape.

If you post a picture of your kitchen you may get more specific recommendations. The style of the room might bring about different creative ideas. Are you evaluating lighting to solve a problem with your existing lighting or is it 'jewelry' for your room? Are you trying to create separation from your island and the area beyond? Have you considered something other than pendants? I raise these questions because I feel that pendants are often overdone and can be visual clutter if not done well. I strongly agree with RL Relo regarding crafting up something with cardboard to experience the volume they will take up.

With the size of the island and lights, and the ceiling height, I’d suggest two. Groupings of three (in any decor scenario) is visually pleasing, but only if scale and space allow, so as not to overwhelm.

IMO not really the kitchen for OS pendant lights, seems they would be blocky in this space. Also because it is long and the ceilings are low, I would think more to do three here . But I could also see maybe putting one over the sink if you really want dangle.

Be sure they aren’t too small or they could feel skimpy.

You preferred three from the onset so bring home a few styles and test. We did this when redoing our kitchen and it was very helpful in making a decision.

I would wait until the counter tops go in so you can get a better sense of the space, but yes I would do 3, or none.
