Candied jalapeño syrup - still safe?

I canned some jalapenos last week using the linked recipe but without the spices, so literally just peppers, ACV and sugar. As recommended by the author I saved the excess syrup without processing it further and have been using a bit here and there. I used some last night and just realized I never put it back in the fridge. My gut says it's fine, but I thought I'd ask if anyone here would have safety concerns. Thanks!

    Was it enclosed? Bottle or jar with the lid on? Should be fine. It's sugar.


    Interesting recipe. Care to share how you're using it and what it's like?

    Mason jar with plastic storage cap.

    I bought a jar a while back, and it's pure deliciousness if you like a sweet/hot combination. I used some in an apple pie (posted about it in a recent WFD) and I love it on burgers. I like it with soft cheese, think replace fig jam with some slices. But mostly I find myself eating it straight from the jar which is why I ran out and decided to make my own. Hope they're as good. I've been making wings with the syrup. Good but a bit too sweet for my taste for that, however my wife loves them.

    Glad it came out well for you, Kevin, can't wait to try mine. I do have one jar in the fridge that didn't click, so I might sneak some early.

    Here's the label from the jar I bought, no spices so I followed their lead to keep it pure tasting. But your variations sound good, too!

    Have you ever tried this Trader Joe‘s product? While the Candied Japalenos are different, consistent y, the uses are similiar. I use this jelly on top of heated brie cheese, and on sandwiches. This is a seasonal product for Trader Joes and it is currently on their shelves and I think it is under $3.

    I also think it's fine, it's sugar and vinegar. I often leave my Habanero Gold jelly out of the refrigerator overnight and it has the actual pieces of pepper in it, not just the syrup.

    The candied jalapenos have become addictive. We made spaghetti last night so I piled a spoonful on the side of my plate to see if it worked with spaghetti, it did and was great . I was doubtful but found myself loving the combination of a few peppers with every bite.

    The celery seed and turmeric wasn't detectable to me so I'm sure yours without them will be just as enjoyable as mine, but I did put a lot of chopped garlic in that I could taste. I picked out some garlic to try on it's own with no complaints, I like garlic and it was great too! I'm looking forward to a leftover meatloaf sandwich later smothered with cowboy candy, and my Cholula and Frank's hot sauce has found some new competition.

    Just a thought, I've had pineapple pizza before, how about pizza with my pineapple candied jalapenos? I think it'll be my next combination after the meatloaf.

    Plain jalapeños are great on pizza, so if you like the sweetness of pineapple on pizza why not the cadied? Just have a care for your innards. I know a lot of guys who loved hot as much as you do and had issues as a result as they got older.

    I read about "cowboy candy" and 'candied jalapenos' last year and then decided to make a test jar after a neighbor gave me some giant jalapenos. I had 8 oz peppers, so I basically followed the same recipe, but scaled accordingly, and I omitted the turmeric and cayenne. I wanted to taste only jalapeno peppers and I generally omit turmeric from most things. lol! I love these candied jalapenos -- primarily with hamburgers! I also think that they would be great on top of cheese cookies, but haven't tried that yet. :)

    Sounds great! I love Trader Joe's Hot & Sweet Jalapenos. They're great on frozen pizza.

    I looked for this thread in order to see when I canned my jalapenos. Answer, Nov 2022. I ate some and then kind of forgot about them even though they’re in plain sight.

    Bumping to ask: How long can I consider these sealed jars safe? Might have seen occasional temps up to 80 in the summers, but generally lower.

    Are you asking about jars that went through a BWB, or just a jar you made and left sitting out on the counter since then? if the former, I’d say they’re good at least several years, unless the seal fails.

    BF went shopping last week and I asked him to get me a bag of jalapenos because I need to make more candied jalapenos! He bought and paid for them but they somehow never made it home with him. sniff.


    eta: I’m no authority though! this serves as a bump for Annie. :)

    Thanks for the bump, PM! Canned in BWB. Somehow I had it in my mind that even properly canned food should be consumed within a year. I could be wrong on that. I hope I’m wrong on that!

    Candied jalapenos are so laden with sugar and vinegar that they’re like a preserve all on their own. That one year recommended for consumption doesn’t mean that they go bad after a year… it just means that beyond that year the product quality may decline. After a year canned products may lose color, texture, and/or taste. Candied jalapenoes are something I’d expect to hold fine.

    Your canned sweet pickles will be fine for years.....they may become discolored but properly canned in enough sugar/vinegar theyw on't ever make you sick.

    And even uncovered, your jar of syrup will be fine left out. Do you think the dust that may havwe accumulated on a plate left out over night will kill you when you use it for your eggs the next morning?

    Made some cowboy candy last summer and ended up with 3.5 pints of extra syrup. I processed two of them and popped the rest in the fridge ... though, at times, forget about putting it back. I use the stuff when making pulled pork and have had no 'gut checks.' I had one batch where I used about six carolina reapers ... which is fabulously tasty, but hot.
