We need WAY more information. And pictures of the room so we can see lighting, wall color, window coverings, flooring, furniture, existing art, etc.

If i was forced to give advice based on the tiny bit of info provided, I’d say no, I wouldn’t pair dark gray with taupe. That’s like adding dull to duller.

Most taupes run pinkish and wouldn’t play well with your floors. Also not sure of how the wall color, chairs & floor work together.
Partly depends on if you are using dining table & cloth daily vs going for decor for the room on days when table not being used for dining. For that decor a bare table or just a runner , with simple centerpiece type decor, is my preference. So you might find one that mixes gray and warmer tan and warm white - sometimes a subtle thread weave or pattern to tie other colors together.
For tablecloth you would plan around you dishes- so different things for ehite dishes vs a patterned china or stoneware.
If your table top itself isn’t ready for “ prime time” and needs to be covered, I doubt taupes are right, then have to go back to either dishes + room colors , or , best “ decorative “ tablecloth colors, whatever it is you want to see on most days, and potentially different tablecloth for dining. I say that because it’s not uncommon for not everything one has to all coordinate all the time. A goal maybe, but not always a reality

Thanks for the picture. I’d do a warm white runner. I agree with the above poster about the gray chairs not really fitting in.

I can’t really suggest a “ color” in fabrics because well they don’t have standard colors! I think
My point about being aware of warm vs cool colors OR color fabrications that somehow blend them. Neutrals don’t all go with each other, for example, taupe and tan aren’t usually good partners. Taupe and gray are hard- because so many different versions of each. If you try to combine a slew of light neutrals it takes a really good eye and careful selection plus good use of texture and other things like art and decor or will be a bland mess. So don’t till out subtle prints or some color because these often bring things together. Just look at kitchen threads about people trying to select whites, creams , grays, woods- falling in love with a favorite this and that but not being able to make them work together. And it’s really hard to get color ( including neutrals) evaluation in a post except when it’s just jarring, because of lighting, monitors.
If you have a store with easy returns you might bring home a few things to try.
What color are the walls? They look more warm- tan direction , which along with floors will take you toward warmer neutrals though a lot of warmer or neutral whites work.
Hence also questions about your dishes you would use and also connecting rooms- do you need to coordinate with flow into a living room. Usually your main furniture pieces drive the show because it’s easier and cheaper to find or experiment with table linens , pillows.

@marmiegard_z7b Just moved in - no dishes yet. I plan on getting plain white. The wall color is Paper Kraft from Sherwin Williams. It has a yellow undertone, and sometimes it looks slightly pink or peach. I don't like the yellow undertone. Was trying to offset it by picking other "offsetting" colors for the rest of the room.

Skipping down to point out the color you see on your device may not look exactly like what you'll get IRL. I'd wait until I have the tablecloth in front of me to decide about the chair covers.

P.S. It's possible that going against the warmth in the paint color might backfire by making it more noticeable...

That is a nice room but your floors and wall color are in a totally different direction. You have more golden/ tan going on. Could you repaint at some point?
It’s hard to “ offset” by just ignoring color tones and adding others.
I have however seen artwork and fabric prints that combine warm and cool colors or even unusual color combinations in a pleasing way and so let you introduce colors you like more. But that’s less likely to work if you have golden- tan walls and just introduce a large swath of plain cool taupe or cool gray.
If you were going to re- paint but floors are golden brown you might be able to find a paint color- most likely some version of white, that bjust a little cooler and

Sorry.. that moves you a little more toward a cooler palette.
Another option is wallpaper. It might not be in the budget but the example is that it can combine a range of colors that reference your wood tones but blend in some others.
I might be over- reading the wood floors- I thought they will be fighting with the pale cool grays and pinks of your inspiration.

If I get a rug, will that make a difference?

If you get a lighter rug, yes, that will also brighten and balance the heaviest pieces...your table and chairs.

@marmiegard_z7b @elcieg I am also now considering a flax tablecloth. It's close to white but not white.

Suggest bringing home a few ideas and testing how each affects the room and how you feel...even designers will do this.
