Let the soup testing begin!

I posted several weeks back that I needed a soup recipe that could be made ahead and frozen https://www.houzz.com/discussions/6340933/another-soup-thread-must-be-freezer-friendly

I have begun testing. First up was going to be the Eggplant Soup from NYT. Not an eggplant to be found at the main grocery store in town! Punted to the Asparagus from Once Upon a Chef https://www.onceuponachef.com/recipes/asparagus-soup-with-lemon-and-parmesan.html#tabrecipe

The asparagus soup was a serious disappointment. It was pretty much flavorless. And my cute little garnish of asparagus tips SANK! The first time I sort of tossed them into the bowl. Bloop, to the bottom! The next time, I laid them on the surface very gently. Bloop…to the bottom again. I have some croutons made from croissants. They floated.

Next up is the White Gazpacho from Simply Recipes https://www.simplyrecipes.com/recipes/white_gazpacho/. I’m excited to try it. The main course is going to be Chicken Enchiladas. If it is like the other white gaspacho I’ve had, it will be a good pairing.
