I would want a luxuriously long vanity with generous counter space beside each sink, so what about adding a storage unit or shelves for linens under the window where the tub was and removing the towers from the vanity area? (The plants are optional, but you do have the light from the window and they add a tropical resort feel.)

Do you access the water heater from the bathroom? If so, make sure you don't block access to it with your remodel.

I'd do the longer vanity and move the toilet to under the window and do a linen closet behind the door. Then your shower could be 36 to 42 inches in depth.

I do not care for two sinks next to each other where yo are lined up like an army barracks or dormitory and have to juggle counter space.

Since you have the space, why not make two separate sink areas, each having their own generous counters and capacious drawers, and if you like them, medicine chests above.

If you two are very different in height, you have one higher than the other to accommodate that.

If there is still more room after that, you can have a cosmetics vanity with space for a chair and still more drawers for all your jams, jellies and powders and paints.

You could have a movable three panel mirror so you can really see your hair, all sorts of outlets for rigged out on the counters and in drawers for your hair dryer and other implements.
