If it were me, I'd use shims that were no larger than the bases of the legs. Then I would put in some small quarter round trim around the base of each leg that was just tall enough to hide the shims. The fact that there will be slight differences in leg height above the top of the trim will not be obvious.

If it was me, i would buy adjustable table leg feet and let them into the bottoms of the extensions so that they were flush when starting, then thread them out to match the varying heights of the floor. This will give you adjustability for the uneven floors and yet give you a furniture type leg look.

I think either of the suggested options would be a good solution here. We have a bathroom vanity of the same design that came with adjustable feet already screwed into the legs, and it had to be substantially adjusted for a very out of whack floor. If you get down on the floor it is certainly noticeable--the feet on one side hit the tile floor and on the other there's a gap--but no one but me ever gets down to inspect that. Some quarter round or other narrow trim at the base of both feet (either hiding the shim or right against the leg if there is no shim) would make the legs match.

Scribe bottoms to fit floor leaving enough height for the dishwasher. It doesn't appear that not one point that run of cabinets does not touch the floor. Maybe hire an installer.

Everything custom should add additional height and depth, for it all to be scribed. This is why custom installs cost so much. It is a HUGE amount of labor to do correctly.

Look like a good, minimalist solution. Some installers wouldn't have an interest in doing that approach because it takes time and attention to detail to get it right, and they just want to get the job done and move on.
