Are you still at the blueprint stage? Are you under construction? I see your dilemma but I don't think this view gives enough information to make a good decision. I think a good idea (which you may have already done) is to spend lots of time on the Houzz photos finding similar spaces and see how they dealt with it and what you like and don't like. It may help you narrow down the possibilities.

We’re at foundation in building. I’ve spent lots of time looking at similar vaults, but most have a different layout without a hallway area to offset the center line, if that makes sense. Closest I’ve come to so far is to offset the lights to the right like this….

I think I would really like that light centered on that peak. I see that you are offsetting the table 2.25ft to the right so that the chair does not enter into the 4ft walkway, right? I think I would center the table under the light, and put the chair for that end of the table on the wall "below" it when not dining if it's in the flow of traffic when you are living there. Does your table have leaves? I would also consider taking a leaf out when not having a large group at the table.

Or you could do a bunch of can lights and not have a chandelier.

I do not love vaulted ceilings and for sure not wones designed for the way the interior is palnned . I use cable lighting in vaulted ceilings they get the lighting wher eit actully is needed and can be done to get lighting over the dining table correctly and even lights over end tables in some cases.I use Tech they have IMO the niceset heads for different applications.
