It may be hard to find 3 pieces (sideboard, buffet and bar cart) that fit into a 157” space and look cohesive.

Would two identical 72” sideboards placed side-by-side be sufficient? The wall is 157” but the servers may look better if they didn’t butt up against the door trim.

Servers with some open or glass shelving would allow you to style portions as a bar / coffee bar.

If you need more storage, do a full cabinet/hutch with glass doors on the upper section and closed storage on the lower. Your designers job is to meet your needs in an aesthetically pleasing way. And a floor plan is needed too. How often do you extend the dining table, and where are you storing the extra chairs?

I need a to scale floor plan and pics of the pieces you either own or are thinking about. You get furniture for your needs first and foremost . If you post pics and a floor plan here that is how you get us to help. Do the floor plan on graph paper post is here in a comment in jpeg format . Then post the pics also in a comment here DO NOT start another post . IMO 70" buffet on a 157" wall is too small.

If you can afford it, I would do a built-in across the whole wall (or part of it - seems like the whole wall would be excessive) as it sounds like you need the space. If you do, probably the next owner of the home would too, which means it would be a good use of funds. That is also providing there isn't a way to make the kitchen more functional with a remodel that you could do at a later date. Think about what you want to be able to store and design it appropriately.

Sounds like storage is your priority, so consider using height, but it’s really important to define your must-haves. For instance, you mentioned bar, coffee and buffet areas + storage for small kitchen appliances, but not your dining needs - do you have a lot? If so, something like this would be your best solution (buffet space lacking though - we use our kitchen table and it works fine for guests and is more convenient/practical.)

This might be all you need (it’s 152” long) and you may find article interesting. Advantage: good storage, buffet space, less overwhelming if your room is small, and less expensive.
