*RED OAK* furniture staining project

Help with wood stains and finishes on furniture. RED OAK
Anyone with experience…
I found this oak veneer (I am hoping it’s red oak which matches the pole wrap I will be adding). Planning to sand down the parts that won’t be covered in the reeded wood paneling (the desk top and base trim). The drawer fronts, side panels and front facing framing will be covered in pole wrap.

Any suggestions/formulas to achieve a neutralized/light beachy oak finish would be greatly appreciated.
I have some concerns about the veneer top, not sure if I can completely be rid of the old finish, how far I can sand since it’s old veneer…I’ve never worked with veneer before.
Would love to do a whitewash or color wash or both. Ideally want to finish with water based clear top coat for durability.
