I’m trying to make a similar decision for a new build. I’m leaning towards a 36” range top because the burners are larger than on my current cooktop (36” Wolf) and there is an additional burner. Like you I won’t use the griddle, and I’ve read that they are very hard to clean. I use an electric countertop model on the rare occasions that I need one.
I’m also leaning towards 2 30” ovens, though not necessarily stacked. The 36” range oven size seems too big for most use. Long time to pre-heat, wasted energy etc. Definitely overkill for most large birds and roasts. If they aren’t stacked you could even pick two different sizes.
If you like the range look, the rangetop gives a bit more of that than a cook top, and you could place one of the ovens underneath it. Cabinetry details could possibly visually balance the size differential.
Overall, I think I’d rather have the extra counter space around the cooktop, and 2 ovens of a more moderate and probably useful size.
Hard decisions…then onto brands!
