Get the 52" width. Why spend all that money on a hood only to make it less effective by skimping on 4" of width? It is needed for better capture of the effluent. What about your hood's depth? Have you asked your cabinet maker how deep the hood will be front-to-back? Typically cabinet-surround hoods are too shallow, like 20" deep. Meanwhile, your 48" Wolf range is 29" deep front to back. Since your cabinet surround hood will not cover the front of it fully, you need to compensate for that with the width.

Do NOT forget to plan the heated Make Up Air system that such a range requires as well. Get with your HVAC pro. It's not sexy to spend money on boring things like MUA, but neither is dying by carbon monoxide poisoning sexy.
