backsplash help

Hi. We bought a flipped house (poor job). There is thick tongue and groove planking on the walls. The countertop in kitchen installed “flush” to the walls but of course giant gaps at the interfaces of the boards. What to do to update the backsplash without taking off countertops and removing upper cabinets? Also,
The cabinets are dove gray Home Depot stock shaker cabinets. I am considering painting them. Any warnings? Many thanks

Lisa M
