FYI - I posted this on Reddit but really only got 1 response, which suggested I change to an all Thermador package, so posting here to see if anyone else has thoughts. Perhaps it's too detailed/neurotic a question, but here goes ...

TLDR: Miele has quite a few options, but not the one I'd really like: XXL, plumbed, in the ArtLine Grey. Need help in assessing the trade-offs for other options.

Context: this is a new build, will be primary residence. Not sure if it's the "forever home" as I don't tend to believe in that, but I tend to stay in homes at least 7-10 years.

Appliances decisions I've made and feel pretty good about:

• Kitchen Cabinets: quarter-sawn white oak on the bottom, white on the top. Either plain/slab fronts, or possibly skinny shaker. Countertops will be a very light/whitish quartz with grey marbling.
• Other appliances: Monogram 36" induction cooktop in grey cooktop , Bosch 8000 series 36" counter depth in stainless steel, microwave in the pantry, F&P panel ready single drawer dishwashers (2).
• I'm planning on 2 wall ovens, one speed and one combi steam, no additional large/massive oven (I realize some of you will feel this is risky, but I'm ok with it).
• With no additional "traditional" 30" oven, I feel like I need to go with the largest CSO available, which means the Miele XXL (or the Thermador, which comes in gray, but seems to have fewer features than Miele)
• Considered option of putting one or both ovens in the island or below the cooktop, but have decided against this, due to do ease-of-use being better in the wall, especially for CSO.
• The overall look will be somewhat similar to the attached photo, imagining that the built-in fridge on the right in the photos will be stainless steel counter depth, and whatever the oak cabinets are on the left, will be the ovens. (it's not the exact layout, so please don't spend any time thinking about revisions to the layout). Cabinet handles and faucets will be black. Windows are black. Backplash will be white with a tinge of grey, elongated subway tile, stacked.

Issues:

• I do not currently own a steam oven, so have no experience with the hassles/benefits of a water tank vs plumbed, but for all I've read, plumbed would seem to be the way to go.
• Miele makes an XXL combi steam in 24", but there's only 1 option in the exterior finish, which is black with some SS surround. • I have room to do 30" ovens (FYI - the interior cavity of the 30" steam oven is exactly the same as the 24" XXL, but there are more exterior finish options in the 30"), although it will take 6" from the adjacent bar nook reducing it from a width of 3'3" to 2'9".

Base on the above, here are what I think my options are:

1. Go with 24" Miele combi-steam stacked with 24" Miele speed oven. Exterior of CSO and oven would be like this DGC7865CTS (there is a Miele Speed Oven to match) .

• Benefits: plumbed; only 24" so keeps bar area at 3'3" wide; CSO is about 1k (US) less than the 30" versions.
• Potential Cons: will the mostly black (and kinda glossy) exterior look ok in my kitchen? Will I be limiting myself down the road by not having a 30" cut-out (future replacements by me or new owners?). If I do this, should I switch the cooktop from grey to black?

2. Go with 30" Miele combi-steam oven stacked with 30" Miele speed oven. This increases the options for exterior, adding the "Coutour" line, which has a stainless steel surround, like this DGC7785CTS

• Benefits: maybe the stainless steel surround will look better in my kitchen; perhaps the 30" is better for future replacement options and/or resale? The Coutour line has the swivel handle which is nice.
• Cons: taking up 30" of space (and reducing my bar space) without adding any meaningful functionality. Cost a bit more.

3. Go with the non-plumbed, grey exterior, CSO, which would be like this: DGC7860, and a coordinating speed oven

• Benefits: get the color I like, which I feel like compliments the over all interior better and coordinates with the cooktop better. (they will be on the same wall, but not next to each other)
• Cons: have to refill the water tank. No water plumbed during construction, which would impede future upgrades to plumbed CSOs

4. Something else I haven't thought up that you guys will come up with :)
