You can tell the fabricator that you do not want to have any seams. Depending on your kitchen, and the size of the slabs, this may or may not cause the need to purchase more materials than if you did have a seam. Just wanted to make you aware. As far as the thickness - it only comes is 2 or 3 CM. In this case, it would be helpful to take this picture to your fabricator so show him the edge detail you are interested in. This is a built up/laminated edge that is done to make it look think. Also, just to make you aware, this will up an upcharge based on the LF for this edge as it is labor intensive.

Any advice on what type of classic 1 tub, under mount sink to buy? Should I go Franke or save the money?

Franke does make a beautiful, high quality sink! It is totally up to you. There are some out there far less for the same look. I guess it depends on your overall budget and trying to make all your selections fit the budget. If not, then deciding where you can cut corners, if needed.

This specific island top I had fabricated with a 4" boarder so I could have a solid slab in the center. It also has a 3" thick mitered edge.

This kitchen is beautiful! Can you tell me how much space you left between the hood and cabinets? Did they tile the entire wall and then hang the hood or tile around it? My kitchen is very similar but not sure how much space to leave. Thank you!
