So much about tile selection is personal preference. Either would be fine, so how do you choose? Look at everything else.

Take a look at your inspiration image. The cabinet door profiles and crown molding are fairly simple, the exhaust hood is simple stainless steel.

Now look at your space. You have a more traditional kitchen with lots of adornments in your cabinetry. Your range hood cover is more complex. The more decorative tile insert would look appropriate to your space, where it might look like a bit much in the inspiration image. Frame? Sure, why not? It evokes some of the mill work you have chosen.

If you want to go with the herringbone, do that. It’s really about what makes you happy when you see it.
