So you want to keep the track light ??? What is it you like about those ? I have track light in my kitchen and dare I say the bulbs are all LED 4000K 3500 K works for many people but not me .I do admit I like the track since it helps aim light exactly where I want it but it was out of necessity we have a MCM ranch with a very low space in thee attic so electricians wantdhuge money to work up there to add al the eltrical we really needed whaen we swapped the kitche for the DR in the renovsation . We decided we had bigger issues to deal with than getting picky aboout the track and I do like it but I aslo do not have over head cabinets except on my fridge wall and I hve a large island so we 12 heads for the track so one strip and then a U spae to get the light in the right places. You have avery different layout so just try changing the bulbs and I would suggest maybe 2 nice pendants over the island and maybe just more streamlined track or even cable lighting for it all.

To help with task lighting to reduce shadowing and increase lumens you can add undercabinet leds. The position of the lights you've got can cause your body to shadow what you're cutting. You could move them over the edge of the counter or 6" in to correct that.
