Waht is all that stuff beside the toilet can we see the whole room please . Post the new pics here in a comment DO NOT start another post.I will say what ever you do now needs to be SIMPLE you have too much going on in a tiny space already .

Some floating shelves in that niche or a custom cabinet for that niche could work nicely I think. Or cabinet over toilet. Could we see the view from the shower towards the other end of the bathroom. Nice work so far!

Sorry, it’s a bit of a mess still. I just got a new light I’m installing tomorrow. I’m not a fan of the new faucet, I think it’s too large for the sink. I ordered a mirror but it got lost.

The white device by the toilet is a dehumidifier. I was using that to help dry some of the drywall work I did. It’s temporary. ANY suggestions about decor or anything else would be appreciated. My plan was to do gold hardware, the light is gold and black and I am still looking for a mirror since the one I ordered was misdelivered.

Consider open shelves above toilet that also wrap into the niche as well, like 3 shelves. Use basket storage bins as needed for stuff you want to store.

We primarily need storage for hygiene items, as my fiancé has an extensive collection of hair products. A couple of things to consider: this is currently our only full bathroom. We removed an old spa tub from our other bathroom and plan to replace it with a walk-in shower, but that’s a discussion for another time. My fiancé is a germaphobe, so we need closed storage because she doesn’t like anything exposed in the bathroom, especially with the risk of overspray from the toilet. We also live in a unique home—it’s a 14-sided round design, and the original layout didn’t account for much storage. While I could find a spot to store some items elsewhere, they’ll likely end up back in the bathroom eventually. I’m not a fan of medicine cabinets—they often look tacky, and the newer ones with lights seem cheaply made. Also, I want to use the niche, as leaving it bare would make the space feel unfinished.

Buying a new vanity will only give you an extra few inches, so don’t think it’s worth it. Medicine cabinets really don’t store that much; could take advantage of the space above toilet. It really comes down to the type of storage needed and volume (can you put larger items elsewhere (ie: extra supplies, a hairdryer, etc in a nearby closet). Shelves in the cubby with baskets would be a good use of that space. Why not get a custom one to hold all the hair prducts behind doors that might make the whole thing function better and ease up the amount of extra storage maybe the finace can spare a shelf.I actually used an old style CD cabinet from Ikea for bathroom storeage clased door but a glass door and glass shelves so something like that could work.Sort of like this one from Amazon

I found one cabinet that will fit perfectly in the space, let me know your thoughts. I’m having a difficult time choosing a mirror, does anyone have any suggestions on the mirror shape?

LIke I said before keep all the rest simple so I would do an unframed mirror the same width as the vanity and please find a light that actually lights the mirror and vanity not the ceiling.

The main problem is that doors at the bottom won't be able to open against the toilet. I think I'd do open shelves with baskets, and then leave the bottom 2-3 feet open. You can stash the trash there, which takes pressure off the rest of the room too.
