The best thing to do is to get in the car, and visit stone yards in person. Getting names of granite varieties off the internet won’t be much help, as stone yards often create their own names. There is no standard. Also, inventory will be different from yard to yard.

100% what darbuka said - go visit some stone yards. Bring a sample cabinet door (hopefully you have one, or at least a sample of the color / stain) and see what you can find. It helps to have an idea of your planned layout, so you can determine about how many slabs you'll need. Try to get samples of the stones you like to bring home and test, or be prepared to do some testing at the yard. Here's a good reference article written by a geologist who has also posted here on the forums.

Visiting the stone yards was probably the thing I liked best while doing a remodel, and by chance the stone I ended up with (which I love!) is different than my original intent. (Not at complete departure, but enough that searching by a name wouldn't have found it.) Also as mentioned above, each stone yard may give different names to different stones, and since they come from nature, there can be a great deal of difference from one lot to the next. (I learned this the hard way during my first remodel at a different house, before I found the kitchen forum and didn't know what I didn't know.)
