I would tile to the top of your cement board, just be sure the waterproofing is finished before you tile, including the cement board set properly with the tub lip.

I would absolutely tile the walls to the ceiling, and on the back wall I would use a contrasting tile like a “feature wall”. All the other tile should be neutral, same tile on floors and walls. Then I’d add a statement chandelier over the shower.

No accent tile and IMO 12 x24 plain tile I like porcelian and for both floor and shower walls but cement board is not waterproofing so taht needs to be done . I do not think taking the tile to the ceiling is a good idea but some darn good exhaust fan is a must I think all thta tile to the ceiling will feel and look overbearing on that tall wall. I assume the tub had a tile falnge I caan't tell.. If you want a light in there you need to make very sure it is to code for that area.

I'd work to get more of that light from the skylight into the room and visually lower the ceiling.

That room is too small to have such a high ceiling so I think the best thing to do is to ignore the ceiling height for the most part. Just tile as high as you would in any bathroom. I would tile in a horizontal pattern so you're not emphasizing the vertical. I would paint the walls and ceiling the same white and the ceiling will disappear. The current dark wall color isn't doing the room any favors.
