Need help redesigning open kitchen and dining room layout!

Hello!

I'm looking for suggestions to re-do my kitchen layout.

I'm trying to keep main plumbing/gas lines where they are to keep costs down, however i'm open to moving oven to a wall if that creates better space/flow.
My sink is in the kitchen island. Ideally I would not have it in the island but I can't come up with a good layout to move it elsewhere.
I have 2 stools at the kitchen island which people sit at often, but it's annoying because my sink is in the way. I was contemplating extending the island and creating a section of the island more for "entertaining" and keeping the portion of the island by the fridge and stove for cooking/prep.
I have a dining room table set up the the same way in the photos right now, but would be open to alternative set up (i.e. pushing up against the wall with banquette seating).
I would like a built in pantry space
I would like to eliminate more of the upper cabinetry if possible and create more space around the stove so I can see while cooking.
I think I have load bearing walls where the fridge currently is

I don't see anything wrong with the kitchen aside from lack of storage that could be accommodated by adding a wall of tall cabinets in the dining area.

You could put the sink centered under the window and have an obstacle free island. You could also shorter the island and extend the countertop on the wall and create a U-shape with a small island in the middle. People can eat at the peninsula by the dining area instead.

The stairs and walkway reduce the amount of usable space in the current FR to about 12’x16’.

Have you considered swapping the two spaces? If the FR becomes your dining room (DR), a dining bench with upholstered back might fit nicely into the window bumpout and maybe you can extend your kitchen and new pantry into the new DR as well. If you close up the kitchen pass thru, the new DR will have a 11’8” wall and a 16’5” wall for a long run of pantry cabinets and a long sideboard/art.

The current DR would make a nice FR as it has more seating space, great windows and an adjoining balcony.

FYI, that isn't a window in the kitchen, but a pass-through to another room.

have you thought of adding additional seating / more lounge type / in the dining part? the space is not connected to living room or family room but has those nice windows/ sliding door and a balcony so it seems like a spot where people would want to spend time. I'd think abut a more versatile use of that end . but the collection of people in your family/ how they spend time/ what they like to do is not known. maybe they run off for nights on the town..or to their laptop in their bedrooms ? who knows?

lounge element added into your beautiful dining zone.....might interest me more than messing w the kitchen, honestly.
