Uppoting vs moisture %

I have been struggling with this question for a while but not sure what the answer is so was looking for some guidance. I am keeping quite a few big plants (palms mostly) in 5-7gal fabric pots (I am a notorious overwaterer so trying to compensate for that with fabric pots). I also have a few wh51 moisture sensors that give me relatively accurate readings of water % in my potting mix. Depending on the plant, I watering when the soil moisture drops at around 30%.
Here is what I am struggling with: should I adjust that 30% watering threshold when I uppot my plants? I believe that with larger pot, a 30% reading at the same spot near the surface implies higher moisture towards the bottom compared to a smaller pot. I could adjust that number and water when it's drier at the top to avoid excess moisture, but how would that affect the roots at that specific spot? They were previously used to specific moisture level so I am not sure how they would react to lower moisture levels.
