Chex mix is pretty dang easy and everyone loves it. Recipe is available all over the web.

I use ingredients from Aldi which cuts down on the price substantially.

I make my mashed rutabaga every holiday and in between because I love it. Buy rutabaga. Peel and cut into cubes. Boil until tender. Mash with butter and a sprinkle of ground fresh nutmeg. I have made it fancier by putting it in a casserole with eggs and milk and brown sugar and then baked, but since we have vegans coming (I use plant-based butter), I don't any more and don't really notice any difference. I'll probably just transfer to a casserole and cover in the oven to keep warm.

I'll also be making my GF's gingered carrots which are also boil/steam/microwave until tender, then mix with the sauce. Again I'll use the plant-based butter -- Miyoko's is really good.

If you like to bake rolls, these are delicious and easy. One extra step is roasting the butternut squash, but that's also easy. I make them with the Kitchen Aid dough hook, so no kneading by hand. They are the most gorgeous golden color; no one EVER suspects it's squash, so I don't mention it until the men and the kids are out of earshot, lol.
