I love butcherblock. It’s a nice choice, in many ways.

IKEA has butcher block counters. Since you mentioned custom, you could also just Google 'custom butcher block houston'. That led me to Houston Butcher Block, Woodcraft and Texas Custom Granite, which also apparently does wood counters.

I guess it matters how big but I have used biscuit joinery to get huge butcher block counters and thta has worked great I actually used the old butcher block counter style from Ikea. twice. BTW I love butcher block for counters the ones in this pic are notw 25 yrs old and apparently going strong . This was my old house . The counter sare the old oak ones from Ikea

Check out their website, have your dimensions and wood choices ready, then call them. I have no idea who is proposing to charge you 1,000 for shipping. I haven’t paid even $1,000 for a delivered block yet. You’ll have to get the blocks joined, installed, and finished locally of course, but that should be easy enough.

I need to call them myself, need two more blocks to finish my kitchen. Thinking about the cherry this time for some contrast.
