Butcherblock oil or Varnique?

I am planning on ordering a maple butcherblock countertop from Boos for my island. . Anyway I will NOT be using it for cutting, I want the long stripe look, think that is edge grain. I am stuck on what kind of finish to choose. I am drawn to the oil finish because I don’t want to risk scratches in a poly or Varnique finish but I am worried it will look too rough, dull like my uncared for cutting boards. Does the butcherblock oil and/or cream keep the wood looking more fresh if you are just using it as tabletop?
