If you are not changing floor - limits redesign/removal of existing footprint of any cabinets/walls, (as you can not match tile to fill in). Is changing floor a pain, yes, but do it now, dust/debris, and existing floor tile can really limit color choices for other items.

If you like to cook/create food not just reheat, do not recommend cooktop in island (splatter, etc). Venthood sightlines are always an issue in middle of a ceiling. Range/cooktop to left of fridgerator with venthood. No island cooktop, then lower bar height section of penisula to counter top height to make that a more subtantial piece of "island". Also adds seating/counter height, which is always more comfortable than bar height. Hard to tell pantry issues by photo. Many pantries just need a gut, with proper wire shelving (flexible height), and lower cabinetry options if wide enough. I love shelves and wire Elfa bottom units for endless flexiblity.
