Here is what the plans were, and the current space. The windows and doors will be replaced. Behind the fridge is a corner fireplace, which will be moved to the other side, so there will be more of a view.

We have 10' ceilings. Cabinets + trim go to the ceiling. Some pictures below. (These were taken before the TV and picture in the FR were hung and before I put decorative/display glassware in the upper cabs. But you can see the trim to the ceiling.)

This was a remodel in which we gutted most of the house and raised the ceilings in the 'public rooms' (not bedrooms) from 8' to 10' - possible because it's a one story. If you're curious and want to see the (scary) before pictures, there's an old thread here.

Regarding the cabinet height: even though I'm tall, it's still quite a stretch to reach the cabinet over the fridge without standing on a chair or stool, so to be honest it's basically unused. I have considered having a pulldown installed in there, but I'm worried about it scratching or bumping the refrigerator panels. Just something to consider if you go with very high cabinets.

You can have standard 42" cabinets so cabinets to the ceiling can be taller if you choose. Or you can have small display cabinets to the ceiling.

For houses for ceiling heights over nine feet, some cabinet companies will provide a small wall cabinet near the ceiling that contains a parachute in case of emergency for a small fee.

We went to the ceiling with our 10-foot kitchen and love the look, but chicagoans makes a really good point about accessibility. Our upper cabinets above the standard reach zone basically became dead storage for a while - holiday platters and things we never use. A few things that helped us actually USE that space: (1) Pull-down shelf inserts for the highest cabinets - Rev-A-Shelf makes good ones. They bring items down to counter height. (2) A solid kitchen step stool that's always accessible. We actually looked into under-cabinet sliding step solutions that tuck away when not in use, which is great if you don't want a stool taking up floor space. (3) Store everyday items at eye level and below, seasonal/rarely-used items up top. The tall cabinets look gorgeous and give you tons of storage, just plan the organization around what you can actually reach day-to-day. You won't regret going to the ceiling!

You can take your cabinets to your 10'-0" ceiling but keep a stepstool handy. Otherwise, you won't be able to easily reach the contents of your uppermost cabinets.

I think all the way to the ceiling just makes sense . Store stuff up there you use once a year and enjoy the freed up space within reach the rest of the year. I much prfer the cabinets to the ceiling than some fancy trim that is only in the kitchen to fill the gap. You can also raise the cabinets higher than the 18" which IMO is too short I do 21" many times so think that also to keep the upper cabinets maybe a bit cheaper too. Usually with 10' ceilings the windows are not squat .
