If it were me, I’d see if I could find the same black quartz. Rip out what’s there. Bring the backsplash up to the ledge molding, and install the outlets and swtch plates in the backsplash. Black outlets and switchplates. Lutron might have them.

Remove the backsplash. Simple fix.

I have no idea if this is possible but can the piece of quartz or whatever that material is be taken off and cut down so it is under the outlets and you do not have those weird cutouts? This way you still have some backsplash there for water from the sink and you do not have to worry about finding a macthing piece.

3onthetree's fix is certainlly the simplest. If you're concerned about water splashing, you could paint the backsplash with moisture-resistant or waterproof paint. I'm not expert in this, but I understand Benjamin Moore's Aura® Bath & Spa Interior Paint is supposed to be very good.

Having a backsplash is nice (at least with the way I cook ;-) ), it doesn't need to be that tall. Take them off and cut them to the height of the bottom of the notch.
