You might look at Wilsonart Crystalized white. It is a white laminate that has pieces of glass throughout it.

Have you looked at IKEA's counter tops? LG Quartz is budget friendly but even so your budget will likely not cover materials let alone fabrication. I would say the odds of you finding something in a remnant section at a stone yard are slim since you do have a lot of run there but its always worth a try.

I would not buy quartz, myself. For a plain white or ‘marble look’, I would go with Formica. And Formica has many other style options, as well. You can find whatever you are looking for.

For a marble look- I like Formica Calacatta Cava. Realistic and subtle marble look.
