Struggling with layout for cottage add on

We have a small cottage with two bedrooms and an "add on" that we are trying to convert to a more formal bedroom ( rather than the catch-all it is now of spare bed, laundry room and storage)
We thought maybe make the total space larger with an addition as well shifting the footprint of the main bathroom.
Attached are two mock ups we did but not sure if one is better than the other or if there is a smarter more efficient way to use this small space.
In the end we would like to have:
A storage room that would also house the laundry and water heater
A main bathroom (with shower)
A small ensuite for main bedroom
Any thoughts really appreciated!

When you say cottage - is this a seasonal residence? Not a place you live in year - round?

Of the two you've posted I like the first one best. But if it is just a seasonal residence then I think the primary bedroom is much larger than you need and you can make the primary ensuite larger and more functional.

The room as drawn is 12'4" X 13'4" and you've got a lot of unused space around the bed. Even if you have a king sized bed, you don't need this much room for it. But your ensuite is tiny and very cramped. Take at least a foot of bedroom space and add it to your ensuite.

And if this is a seasonal residence, then you likely don't need a large closet for clothing or heavy coats. Make the ensuite large enough for a sink, toilet and shower - you won't regret it. Have a smaller closet - or do you need a closet at all? Sometimes a few drawers and some wall hooks are all that is needed at a cottage.

Do you need storage for towels and extra bedding? Is the space between the primary suite and the washroom and utility/laundry room just a hallway? Could a storage cupboard be incorporated in that area?

Where is your dining table? What is the space with its back to the kitchen sink wall?

The second plan you've posted would be a hard NO from me. So many doors in the space around the family bathroom and laundry area, and absolutely no to a second door into the master ensuite. All those doors just limit the space and usable wall space. Wall space allows for vertical storage. Always needed for extra paper towels, toilet tissue, towels, cleaning supplies and vacuum, etc.

And why would you need that extra door into the ensuite anyway, with the family bath right next door?

Its a toss up for me whether it is better to have the laundry or the family bath next to the bedrooms. Laundry can be loud when its running, but so can a toilet and shower. Put sound insulation in the walls around both rooms to limit the sound transfer to adjacent rooms.
