Used to have a galley kitchen in my house as well and it was quite difficult having more than 1 person in there at a time! Did you find a good layout for your kitchen? Would love to see how it turned out.

galley style ktichen are not very efficient for multiple cooks.

Do you have any room that you might expand into? - For example, We were able to take a wall out between the galley kitchen and a hallway and use the dining area wall to make a one wall kitchen or an L shaped kitchen. The plan is the current kitchen - the photo the original kitchen.
Galley kitchens in our family are called "one bum kitchens".
