I would just make sure you hang two, one to hang on each side of your face, not just one centered over the sink or you may end up with shadows!

Pendants at face level are a good solution for bathroom lighting and will provide even lighting without shadows.

One thing you need to consider is that, with your current bathroom layout, a pendant on each side of the sink will put one pendant within 3' of the shower. As a professional, I always ask this question first :).

Pendant lights can look great in a bathroom; just be careful about locating them directly over the sinks, as they'll have to be fairly high for head clearance, and can create shadows as discussed above. Placing them lower, adjacent to or between the sinks, allows for enough space between the ceiling and vanity/counter, which will feel more proportionally appropriate and create more flattering light.
Another important consideration that might determine the feasibility of this approach would be the amount of space between the sink and adjacent towers at either side; you wouldn't want the pendants to feel too tight or cramped, in relation to the vertical planes at either side. Perhaps a smaller glass design could work (see the attached photo); otherwise, wall-mounted fixtures might be the best alternative.
