Beautiful slab! I would take it all the way up to the upper cabinets. Here are a few kitchens I found with Mombasa granite to give you some ideas. With your light cabinets and floor it will really make the room.

This back splash tile would be great.

A granite back splash encloses the space while tile opens it up.

I have granite like this and decided to go with a light grey tile backsplash. It looks good, but I kinda wish I had done a granite backsplash instead....less grout to clean...and caulk where the granite and backsplash come together. Plus the people who installed my tile didn't do that great of a job. You don't even have to take the granite all the way up....my granite installers made a backsplash in one area under my microwave. I like it more than the tiles. But, that's just me:)

You might not be able to tell from my first picture, but the grout is all brown and the caulking is wearing out..... Here's one more shot:

Please, don't use any sort of mosaic pattern. There is a lovely pattern in your granite, and you don't want to have anything compete with it. I recommend either a full (to the bottom of the cabinets) backsplash of the same granite, or a subway shape tile in a solid color. Be very careful to get one that is in a similar tone, and the grout shouldn't be high contrast.
Let that granite be the star!

If the tile is smaller scale than the granite which in this case has a very large scale pattern the two will not compete. The solid color glass also could work if you are afraid of the mosaic but both are somewhat light reflective and lighter in visual weight than more of the granite which will darken the space, make the space feel more closed in and has a lot of pattern of it's own. The granite is beautiful but as with much of design the secret is knowing when to stop.

I would recommend using the same granite too. I like that look more and more, and don't have to worry about matching.

I would use simple glass subway tiles in a medium tone taken from the granite, stacked horizontally (rather than in the more old-fashioned brick offset pattern).

Thanks all again - we are going with 2 x 12 subway tiles laid out horizontally, certainly not the brick offset pattern. We just had the appliances installed yesterday and the granite is gong on today! THANK YOU for the grout and caulk advice. That aspect DID NOT cross our minds at all. I can see what a pain it can be if it's a lighter tone and gets discolored, or if the caulking wears out and looks bumpy. Now, we are told to get a trim for a more finished look
