The ceiling should definitely be flat. For the walls, maybe this will help you decide:

Ok...We all agree that "flat" should be the finish for the ceiling. I am still having difficulty in deciding between "Satin" and "Pearl" in the wall finish....any more suggestions? Thank you all so much! My husband is "priming" the walls as I type this! BTW, I forgot to mention the laundry room and 1/2 bath will actually be painted "Revere Pewter" by BM!

I would recommend matte for the family room walls. Anything with a higher sheen will show more imperfections and is almost impossible to touch up, you'll have to re-paint an entire wall. In the laundry room and especially the half bath I would use an eggshell or pearl. In Benjamin Moore a satin is only one step down from a semi-gloss.

I'm going to throw out there that I have very successfully used satin on my ceilings and love it! It helps reflect light in a beautiful way and in my 90 year old house, I'm totally fine with seeing 'imperfections'. And we have kids so putting a bit of sheen on the walls washes a bit better in my experience.
