I think you should do something pretty bold since you have such a neutral cabinet and countertop combo. The herringbone is more restrained, but the others give you a major wow factor. They are from Ann sacks and walker Zanger. Please don't do subway tile. You need a color or pattern to liven the space up.

I just noticed your fridge door opens on the wrong side for maximum convenience, have it changed to a left swing.

That is one of the first things I noticed when I walked in, however if I have it changed to a left swing there is a chance it will bang against a wall...

Looks like you are going for the clean white on white look. It is beautiful and sleek. I would go for white tiles with texture and a dark floor to finish your look. Sort of like this. http://houzz.com/photos/786647

What is (or will be) your flooring?

My floor is a 12x24 polished porcelain, the colour is Simplicity Grey

If you end up going for marble mosaic make sure you get lots of samples and/or work with a supplier who has used both materials (i.e., marble & quartz) together. Often the whites of real stone are slightly different (grey-ish or yellow-ish) to fabricated stone, resulting in one looking a bit dingy.
