Help! How do I tile around the kitchen windows when they have no trim?

We have no trim around our windows, just a 3/4 bullnose where the drywall meets the window.
I thought I wanted to do a 2x8 subway or slab, but not sure how to finish it around the window.
Plan was to go all the way to the ceiling, but don't think that will work.
