NEW HOUSE HUGE YARD BLANK SLATE LANDSCAPE HELP!

Huge backyard! Tons of potential! Double deck, leading to a completely flat mole-ridden chain link fenced in yard roughly a lot and a half long. It backs up to a school playground. I have a shed in the left hand corner, and a leftover garden from previous owners- which I plan on getting rid of. Also, the previous owners thought it would be AWESOME to line the perimeter of the house in lava rock----I HATE LAVA ROCK. There are three large pine trees bordering the fence to the school yard, which need to go---but here's my dilemma. Along with backing up to a playground with only a chain link fence separating us and the children, We have EXTREMELY barky dogs. I need some privacy, I would like height, Fast growing plants/flowering bushes to plant along the fence- but I dont want it to look "overgrown" or unkempt. i love flowering bushes, but my fear is that they take too long to see results. I'm in michigan, zone 5..........and my soil is sandy clay- we're in a "lake" community---50+ but we lack waterfront access.
