My home is a remodel which sounds like what you are doing too. I completely understand your plan and it sounds like it is going to be great. I want to caution you about one thing if you have not lived in a house with a lot of glass, bad glass will make your house a horrible living experience. Consider overhangs in the appropriate orientation and window treatments that help cool the house. I have a bias to European style tilt turn windows because of their incredible air sealing and temperature management. Triple pane windows are a must. Think about window treatments and exterior screens (insect and glass protection) before you commit to the windows. These should be integrated into the window design. You don't sound like you need a curtain wall. Do you expect your windows to be operable? I know Zola and other makes standard windows and doors that are operable up to 11feet high.
