Yep! Paint the trim!
One tip: Get really good tape! The Frog tape brand is probably one of the best. It's green. Expensive but worth getting clean lines while painting. After you paint, do not let the tape stay on the wall and wait for the paint to dry. Peel it off immediately! (I know from experience! Otherwise you will be using a utility knife to cut it away! haha!)

I chose to do white doors with stained trim around them on my second floor and the basement, and I like the look. It is also much easier to keep clean. I don't' think anyone notices that the main floor has all white trim. I like the contrast, so it is mainly a matter of personal taste. Remember, your grain in the wood trim will show through the paint, so keep that in mind if you think you like that look. Again, personal taste issue. Good luck!

One last thought...remember, if you paint the door trim, you will still have wall moulding that is oak...once you start painting, it is hard to know where to stop, IMHO.
