I'd pick a wood color that gives a nice contrast with your cupboards and counter, but also with your walls -- e.g., if you're planning on keeping the dark brown in the eating area, I'd go with a natural oak, which is a middle tone wood -- you can pick the type/stain by bringing some samples home. If you're repainting that wall, then you can do just about anything, although there's some argument to be made for echoing your decore elsewhere, so probably a middle tone to match the hutch in the living room, or a very dark to echo the dark trim and black furniture in several places. I'd stay away from the lightest finishes, because both your cabinets and your dining table are very light, and everything would sort of disappear.

We installed these peel and stick using the plastic spacers for tile and grouted them after. They look great and can fool anyone into thinking they are real tile. Putting them on the diagonal worked wonders for this effect as well. Easy, easy to do and relatively inexpensive.
