    The convection oven is awesome! I have both a gas range/oven and convection oven and since learning how to use it I always prefer the convection.

    I never knew I needed a convection oven in my life until one was imposed upon me (rental). Once you've had crispy baked "fries" and perfect roasted vegetables [following 6 months of trial-and-error temperature adjustments], you just can't go back to semi-steamed goods.
    I probably shouldn't try a gas range...

    I have one but don't use the convection aspect of it often...not sure why though.

    Yes! A chef I know said use convection for everything except custard items. Lower the temperature 25 degrees and cook everything else on convection. Works every time!

    Love convection! I'll go one further though--get a Speed Oven! I have a GE Monogram Advantium Speed Oven--it's 3 ovens in 1--speed, convection, microwave. I can cook a 5-lb. whole chicken in 25 minutes--done to perfection! (BTW I don't work for GE.)

    I have had a regular oven. Then a convection oven. Now I have a combo oven and I wouldn't trade it for anything. I find regular ovens are great for homemade cakes, pies, breads, custards, cheesecakes, and pizzas. Convection oven I prefer for casseroles, whole chicken roasting or any solid meat dish (like meatloaf), and for roasted whole veggies. So I set out to find a combo and did. This one also has a rotisserie as well as wonderful interior grill.

    We have a convection oven and we love it. We find that it cooks food more evenly.

    We just purchased our first convection/microwave. It is so awesome to have a convection oven. We use it many times a week as an overflow oven (breads, baked potatoes, small casseroles, cookies). Just two of us so we don't always have to use a big oven. Like having two ovens. On the downside they are not self-cleaning like the bigger convection/regular only ovens. Not too hard to clean as its stainless steel inside.

    You don't need to lower the temp unless your convection oven is OLD. Otherwise, the adjustment (25 degree drop) is automatically made for you. And if you haven't tried using convection to bake 3 trays of cookies or rolls at once, you really should. You can't go back to the time waster of not using/having convection once you've experienced the convenience.

    There is a new convect steam oven that will be every home cooks dream. I know my kitchen remodel will include it!

    The Miele pictured in my kitchen above is great. But there are innovations all the time in ovens, including the steam ovens, speed ovens, convection/micro combosetc. It is REALLY important to stay on top of the new innovations so you don't miss out on great new options.

    convection steam ovens are popular in Europe...micorwaves are not

    Dacor gets my vote. Extremely efficient both convection/traditional. A surround-roast feature that is a must for roasted meats.

    I had never cooked with a convection oven until we got our new Aga. It has a full convection oven and a multi-purpose oven, that can be regular, or convection. It has changed my life! Love love love it.
