Poor granite fabricating. What do we do?

We are customers of Direct Buy. They recommended a granite fabricator to us that has been very difficult to work with. We had all the countertops in our new home done with granite and quartzite in our kitchen. After carefully choosing and laying out the templates on the slabs we bought with the business owner in September, the slabs were delivered to them and we told them they had to be in by November 15th, as we had a plumbing inspection due the beginning of December and had to get the sinks and faucets installed. We had difficulty getting the owner to return our calls to check on the timeline. After getting the granite supplier to contact them, they finally called us. After numerous delays and frustrations, they finally installed the granite, but did a very unprofessional job on most of it. They cut out the wrong sink on our island, ruining the specially chosen island slab. Then they cut the rest of the kitchen in a helter skelter template placement, mismatching all the design flow and not piecing it together at the proper places. Hence, the counter looks like two different types of quartzite. The edging is rough with some rounded and some square edging. the laundry room and one bathroom slab was broken and pieced together. They didn't use plywood under the slabs except for the bar top, hence the breaks. We found out the owner did not supervise the job or has even been to see it. She requested that we pay her the rest of the installation due, but she has still to see the job her employees did. None of the windowsills were installed, the countertops were not even polished and sealed as agreed upon. What are our options?
