winterizing help needed

I live close to the Gulf Coast where temps can dip to 0 overnight, but climb back up to the 50's the very next day with a lot of sun. I need a better way to protect my outdoor container plants than I have in place right now. In the past, I have contructed a frame and covered them with a tarp, but our day temps flucuate so much, that they sometimes suffer because I can't uncover them fast enough being at work. For example, we can have a frost overnight and then the 70's during the day.

I'm wondering about covering them with a large weed cloth material that will allow them to breath as opposed to the solid tarps I have been using. Would this offer enough protection from the cold and keep them from suffocating durin the day? Our cold weather usually doesn't last more than a few days.
