Cover crop question

I just moved into my new home. I went from a townhouse to a rancher on 2.5 acres. There is a fenced off garden that I'll be using, but it is HUGE, about 4250 sq feet. That's too much for me to plant this year. I'd like to put a cover crop on there, but since I have the whole growing season, I would think that these cover crops would go to seed and I'd have issues with them returning next year.

So I'm looking for recommendations on a cover crop strategy. Should I plant a clover till it under some time in mid Summer? Or is there a cover crop that would not go to seed the first year? Or maybe it would be acceptable to allow it to go to seed and just weed it out next year.

Also, should I till under the cover crops? Or would it be better to cut them and put them on the compost pile?

Thanks in advance.
