Two good old fruit tree nurseries that I know of, in GA - Lawson's(if they're still in business), at Ball Ground, and Johnson's, at Ellijay. Check 'em out.

Personally, I'd plant a variety that I can't purchase in the grocery - You can probably buy better Galas & Grannies than you can grow - 'cause the likelihood of you producing picture-perfect apples without a heavy spray program is pretty low - and I'm not sure that you'd save any $$ by the time you purchased the sprayer & necessary pesticides.

Centennial crab & MonArk are two that have been pretty productive for me - and produce a high quality apple, with virtually no care.
The folks at Lawson's & Johnson's may be able to make other recommendations.

I'm not exactly the expertise you were looking for but I bought a couple of dwarf varieties last year. One fruited, the other didn't. The one that did had fruit full of holes and the fruit never matured. Most of them had fallen off the tree. Definitely didn't look like the photo on the tag. They do flower very ornamentally though so I might keep them for that reason alone.
