Cutting Back Herbs

We have had such a mild winter here on Long Island that many of the herbs we had last season in both pots and in the ground have come back. The chives, oregano and sage usually do come back but so did the thyme and the lavendar we had in a pot. Even a potted lemon balm plant has come back. So far I have tried to cut most of the wood out of the oregano and thyme plants. The lavendar is very leggy and so is the sage although it has just started to fill out. I was just wondering about the best way to cut back these plants. Thanks.
